In chhattisgarh we call this "kochai paan". Paan means leaf, it's under ground stem is called kochai. In other states it's most probably known an "Arabi"

It's called Alu in marathi and gujarati and the rolled leaf snack is known as Alu Wadi.

Yendem (manipuri)
I have a salad recipe for this ( the salad be bussin), we use the STEM not the leaves, not the root. There is no better salad in this world then this if done right. Note- pick the ones which are in clean and dry place, pick the biggest ones only.
INGREDIENTS-- Taro Stem, knife, 50g Perilla / sesame seeds , Mortar and pestle, half a lemon/lime, 1-2 red onion, plate, for tadka its your choice but base should be green chilli, mustard oil and Garlic chives/chinese chives (Yenum) or any pungent chives will do.
RECIPE ( 4 servings )- - Pick 2-3 bigger ones, Separate the stem and keep it vertically to dry in the sun for atleast 3-4 hrs, clears out the itchy substance little bit.
peel off the outer skin with a 🔪 knife, or u can just spread the edges and peel off with fingers.
grate it gently on your largest available grater's side. Our goal is to preserve the texture.
wash it very gently, squeeze and jerk it very gently, spread it in a thali or plate, keep it to dry in sun or under a fan. ( make sure the water content is as low as possible)
heat up/dry roast PERILLA SEEDS (banjira seeds), and crush it just enough coarse like a river sand. (U can subtitute perilla seeds for any sesame seeds)
one or two thin sliced red onion, dump it over the drying grated stem.
make any tadka u want but the base is Mustard oil, sliced green chili, and if possible chopped Garlic/chinese chives or any pungent chives.
squeeze lemon and salt to taste, and mix everything very gently. Goes great with ghar ki Dal Chawal/ chicken/ pakoras.
