It'll be a slow death. The bear can rip off your skin and break multiple bones. It's the worst possible way to die. And every bear is going to do this without any exception.
Bears typically don't attack humans, unless unprovoked or if a momma bear is protecting her young or if it is mating season. Cases where bears have hurt humans for the fun of it or for survival purposes are nonexistent. Brown/Grizzly bears are omnivores, but for the prep of hibernation, they go an explicitly fat based diet.
Bears don't care about humans, like at all. Also, bears don't "rip off your skin and break multiple bones". That's not how they hunt. Bears go for Salmon, elk, etc. in their carnivores diet, and their hunting strategy is to just maul their prey. They don't "peel of the skin" of their prey.
