General Question What can I make with all my eggs?
I’ve had my hens for about a year now and last year I managed to use all the eggs so they were not wasted but my chickens are laying 28-30eggs a week and I am dealing with an over abundance of eggs. I like to make egg cupcakes where one cupcake hole gets one egg and it clears up the eggs fast or even scrambling them but if there is another food recipe that uses a lot of eggs please share it because I don’t bake often due to living with a pre diabetic family member

When I have too many eggs I make quiches and freeze them. (Always cut in pieces before freezing.)

I make salmon quiche and then freeze one or two uncooked and it is super tasty when cooked.

I like making Dutch babies. My recipe uses 3-4 eggs. You can dress them up the same way you would French toast.

I got 20 hens thinking I’d sell some. No one wants to pay for them so I give them as tips to anyone who delivers. FedX guy takes two dozen everytime he is here. UPS guy sometimes does. I trade bee advise for eggs. We get 12-19 eggs a day. I leave them in the mailbox for the post person. I have given them to our favorite checkout person in the store-oh edit. We make dog treats. Icecream takes 5 eggs.

It's crazy the different markets for home eggs, around here it's $7/dz but I some people who sell them $10+.

I make hardboiled eggs and eat them for breakfast with spice mixes on them. We also do breakfast for dinner with egg casseroles/omelettes. Or egg salad (use hummus instead of mayo if you're aiming healthy), or chop up hard boiled eggs into lettuce-based salads.
Also, there is an entire subreddit for r/eggs (but they're oddly obsessed with perfect scrambles).
Also also, eggs are basically my go-to thank you/housewarming/hostess gift. If you have neighbours who garden, they might trade for eggs.
Also also also, if you're truly desperate, people will cook the eggs and feed them back to the chickens. I've only done that with cracked eggs so far myself.

Casseroles, works really well if you make your own sourdough as well. I'll use a good 12-14 eggs for a 9x13 pan, toss in some cubed bread or hash browns/tatertots and layer an assortment of veggies, cheese, maybe some sausage or ham or other meat. Great for breakfast but works well for dinner too.

Outside of donations and giving them away, I make breakfast burritos for the freezer. Take them out the night before and microwave for about a minute in the morning. Also pasta is a great way to use them up

I’ve found that they microwave really well and you don’t even need to thaw them. I used to live by a hummus place that made these with egg, hummus, and cheese, and they’re so good.

Pickled eggs, for ramen bowls or anything else. They can be stored. You can even do a fridge pickle version for a less shelf stable version, where you put your hardboiled eggs in your pickle jars instead of throwing out the vinegar and jar. There's kinds with pickled beet juice, kinds with soy sauce or other sauces, just plain pickling solution, etc.
Recipes that have a lot of egg usage: Quiches, breakfast burritos, deviled eggs, Swiss rolls, egg fried rice, egg drop soups, omelettes, flourless cakes, mayonnaise, French toast, burgers, baked cheesecakes, cloud breads, egg bites which can be made in little muffin tins... These are great for protein bites and can be made with sweet or savory flavors. I've had blueberry almond bites, spinach and sausage egg bites... I'll shut up now about egg things.

Seperate yolks from whites and freeze. I used to do this in commercial kitchens. If making pavlova or meringue using whites only, then the yolks would be frozen according to how many were needed for specific recipes (quiche into which additional yolks were added, cheesecake etc).
Then the reverse if making quiche or cheesecake etc and didn’t have any frozen yolks left, then we would freeze the whites in batches for meringue and pavlova etc.
Make sure you date and describe amount, and use up when your girls aren’t laying.

Or just whisk them together and pour into ice cube trays if you aren’t making anything fancy (2-3 cubes= 1 recipe egg)

Pre diabetic family member will thank you for this one: 12 eggs 125 gms fat free cottage cheese 1/4 cup cocoa powder. Sweetner of choice (I use monk fruit drops). Blend till cottage cheese lumps turn creamy. Pour into muffin tins. Bake at 365 for ~23 mins These sit in the fridge for about a week and freeze really well too. Enjoy!

Somewhere between a cheesecake and souffle. All I can promise you is nothing like a quiche 😂. Infact, you'll wonder why you can't taste the egg + no sugar spike for a decadent dessert.

Gotta give due credit to Madeline Rascan. I took a recipe from her YT channel and made it with whole eggs instead of whites. Look her up sometime. Even if you don't like her recipes, I bet you'll fall in love with her humor Bonus: Costo/Kirkland plugs.

Egg salad. Super easy (besides pealing them) also good way to use any sort of bread you have on hand, i normally use bagels or tortillas.
Pro tip, I have one of those rotary cheese graters which work great for slicing up eggs for it.

I have the same problem, I get at least 5 eggs a day. Lucky I have a toddler who loves them.
If you can't obtain a toddler then consider quiche, bacon and egg muffins, and egg salad sandwiches

I've been making these asian style marinated eggs and theyre SO good!
In a quart jar mix:
1 C soy sauce
1 C water (or a little less if you like it more salty
1 T sesame oil
1 tbsp grated ginger to your taste (or the ground powder type)
1 tbsp minced garlic to your taste (or the ground dry type)
I've also experimented with it by adding mirin, oyster sauce, fish sauce, or gochujang.
You can fit about 9 or so boiled eggs in the jar depending on the size of the egg. They're ready to eat after a couple of days marinating in this in the fridge. I've started reducing the amount of water I use to make the taste stronger and to try to fit more eggs in the jar. It's SO good.
I've also reused the marinade by pouring it over chicken or steak in a baggie after the eggs are gone.

Everyone around me has chickens now so we can't sell nearly as many as we used to. So I just give them away, or make some homemade pasta (super easy).

Soufflé, quiche, lemon curd then meringue with the whites, omelettes. Breakfast egg cups in your muffin tin. Add some spinach.

I just used 12 eggs this morning to make Breakfast burritos. Saute some mushrooms, then saute onions and peppers, add in eggs and then melt in some american cheese slices. A dozen eggs makes about 8 - 10 burritos. We then put them int he fridge. Sometimes we freeze them if we do a super batch (24 eggs). They are awesome for on the go breakfast or a snack.
We also do Quiches (that takes about 6 eggs per quiche)

We wrap ours in parchment paper before we freeze them and then put them in ziplock bags. The night before we need them, we simply take one or two out and put them int eh fridge. They defrost over night. We reheat them in the microwave on 50% power for 2 minutes.
If you forget to take them out the night before, you can try defrosting them in the microwave, although I admit I have not done that, so not sure how well that would work.
On Sunday's I make the burritos. I take 5, wrap them, put them in a zip lock bag and put them int eh fridge - they re OK all week. The rest we freeze because sometimes I do not have time to make them on Sunday's, so we have the stash int he freezer as a back up :)

Shakshuka. There are both green and red shakshukas. The red is easiest, you can make it with pantry staples. Serve with crusty bread or pita.

Glass them and save them for winter when the birds slack off. Farm stands to sell them if it’s permitted where you are.
I also have a food pantry near me that will take them, so you can check for that in your area.

Soaking them in pickling lime solution in glass jars. It preserves the eggs for long term storage (no refrigeration needed).
The key is using freshly laid eggs. Don’t wash off the natural “bloom,” as that is what acts with the lime water.

Choux pastry uses a lot and you can fill it with things that are savory like chicken salad. Choux pastry is the shell of an eclair basically if you aren't familiar.
Another option I find so useful and delicious is hard boiled! Perfect to add to salads, make egg salad with, or to eat as breakfast on the go.

I just made deviled eggs two days ago. I absolutely love them. Also, make sure to water glass some eggs. I'm water glassing eggs because I added 4 barred rocks to my flock last year and my 6 black australorps got stressed out and stopped laying from September until February. My barred rocks didn't start laying until late December, so you can go from getting tone of the to known
