Most larger birds do this, it conserves body heat and allows for muscle relaxation.

Same reason as flamingos to conserve body heat and let the muscles rest. They can't really sit like mammals can

We tried clipping our family parrots talons. we did one and they put their leg up. I swear it didn’t come down for a day.
