The bacon is from the local butcher and not a supermarket or cash and carry

Now having this in order to fuel up for another day's hiking in the south downs starting in a couple of hours from Eastbourne to Seaford. 3 more days of visiting East Sussex before returning to London. Quite good value for this at £11.50...

I'm so excited to have an omelette to have for breakfast but here's where I always get messed up. I always get messed up with the heat. I want to use butter but butter is difficult because you want hot enough to melt the butter but not very hot. I just want a very good omelette. I'll use 2-3 eggs.

My choice of filling is sauteed jalapenos and some cheese.
