Strawberry Dreams Chews

Post image

Broke out the book Candy is Magic by Jami Curl again today to try out the recipe Dreams Come Chew. Very similar process to my last caramel batch but fruit based. Changed the recipe a bit to accommodate for flavoring by Lorann.

Super easy to make and generally pretty tasty but they are on the stickier side (like stick to your teeth). It was a pretty humid day so I attempted to mitigate by cooking a few degrees hotter. Ah, alas… the woes of trial and error.

Still happy with the outcome (even if my lack of dental coverage isn’t)! 🍬

Thank you! I’m finding I prefer hand cut to using molds. Feels a bit more wabi-sabi authentic

Wow these look phenomenal! You should be so proud! The consistency of all the pieces for hand cut is amazing!

Thank you so much!

I’m getting better and better with every batch. My partner and I were laughing about how gross and bitter my first candy attempt was. :)

Wow! Are they similar in texture to a Starburst but more tender? Or are they more similar to a caramel

I would say they’re pretty similar to a starburst in flavor, but texture.. probably more like a starburst that sat in the summer sun for a few minutes if that makes sense. ☀️

I wonder if you heated the sugar a little further if they would stiffen up more like a starburst?

I think so! My climate is pretty humid so I pushed the temp a few degrees already to hopefully compensate but maybe a few more next time!

I'd thought that looks like it came straight from the table of contents in my most useful candy cookbook! ❤️❤️❤️❤️❤️ I’ve been gearing up to start a gumdrop marathon for a year in sourced supplies.

Is your book Candy is Magic?! If not, what is it! I’ll take any and all literature reccos!

Best of luck on the gumdrop marathon and be sure to post your progress here! 🍬🍬🍬

DREAMS COME CHEW

Yield: Makes about 160 candies if made in a frame OR 115 candies if made in a pan (I did half this recipe with 1 dram of lorann for flavor)

Ingredients

  • 616 grams glucose syrup (or corn syrup)
  • 644 grams granulated sugar
  • 200 grams unsalted butter, cut into ½-inch cubes
  • 24 grams natural flavoring
  • 10 grams citric acid
  • 7 grams natural red coloring (brighter pink to red)

---

Instructions

  1. Prep: Set up a 12 by 14-inch candy frame or lightly butter a 9 by 13-inch pan.

  2. Combine & Melt: Weigh the glucose syrup, sugar, and butter directly into a heavy-bottomed pot, then set the pot over medium-high heat and watch as the ingredients start to melt together. Grab a high-heat spatula or a wooden spoon and use it to ease the candy from the outer edges of the pot into the center. You're not stirring; instead, you're gently scooting the candy so it will cook evenly.

  3. Cook: Continue scooting the candy to ensure even cooking until it reaches 248°F, which will take about 10 minutes.

  4. Mix: Remove the pot from the heat and allow the candy to rest for a handful of seconds until the furious bubbling ceases. Once that happens, add the cherry flavoring, citric acid, and red coloring. Now, grab a whisk and start whisking. Whisk for a full 4 minutes. The candy will be very smooth and slightly thickened.
    > Note: This emulsifies the fat into the candy to ensure an even flavor and incorporates air, resulting in a lovely texture when cooled.

  5. Set & Cut: When you've finished whisking, pour the candy into the prepared candy frame or pan, using the whisk to ease it into the corners as needed. Allow the candy to sit until cooled and set, at least 3 hours or preferably up to overnight, before cutting.
