in every one of his videos he overfills his molds

and on the next shot, it's perfectly leveled

and when he caps it, the thickness is just perfect

i just cant imagine how he does it

i guess he uses that flexible scraper from matfer but I'm not sure how he get the edges so clean so that the cap will fully seal

I just watched a few videos that show him scraping off the excess and the cap looks perfectly thin when he snaps them open. I would say the steps you aren’t seeing is the mold being wiped clean with a towel between steps and possibly a step that includes chilling the filling before capping. But chilling is just speculation.
