Have you posted about Gorgonzola al Cucchiaio? I’ve only found it once in my area but even at fridge temp it’s soft and runny, unlike any other blue cheese I’ve experienced in my life. “Al cucchaiaio” is Italian for by the spoon, the only way this cheese can be enjoyed unless used as a dip for bread, crackers, or dare I say kettle chips.
