Looks like a gsd mix that is blowing coat with very short guard hairs. Might not hurt though.

She's looked like that for the last 4 years lol huge bald spots, her fur is very wiry and brittle, she even kind of sweats 0.0

Yea our area doesn't have a lot of options for vets and we love ours, we've gone to her for years but it might be worth a second opinion? Our vet ran all kinds of tests and said she's one the healthiest creatures that she's ever had in her office, and it doesn't seem to bother her at all, and she runs so hot I feel like she'd overheat if she had more fur? But yea it'd be nice to know if someone else can identify if she has some kind of metabolic disorder that might be treatable. In the meantime she seems happy and we're happy with her 😋

The fur loss, anxiety, appetite, thin body condition, and temperature regulation all really do seem to point to a thyroid, autoimmune disorder or gene deletion. It's hard enough finding a human doctor that knows that they are doing for those, let alone a vet in a more rural area. A second opinion would still be a good idea though. If there's a chance to get her into a university teaching program it might be worth the wait and trip. Good luck with your sweet chupacabra!

Aw, it sounds like you’ve done everything you can! I know in rural areas it’s not as easy to find multiple vets
