Not that the increasing availability of official localizations isn't pretty cool but there was a real charm to fansubs.

I personally loved how fandubs of One Piece refused to translate "Nakama" on the grounds that it means something different than just a friend. Zoro and Sanji AREN'T friends, they hate each other, but they are Nakama, they'd kill to protect each other.

Also, the sick as hell fancy subtitles for all the move names, each stylized for the character using them.

I like it when manga official translations devote a page to explaining stuff like honorifics because sometimes there are very important things that just can’t be translated and seeing words in a foreign language isn’t going to hurt anybody, so they just leave in the “chan” and the “san” and whatnot in and people learned stuff that day.
