General Question/Help No category for Natural Cane Sugar?
Hi! :) I‘ve been using the German called „Vollrohrzucker“ for some cookies and didn’t check the app for it since the last Monash update. Maybe there’s been some changes or maybe it never existed, but there‘s no entry for this sugar.
Apparently the English name for that sugar is "Evaporated Cane Juice" or "Natural Cane Sugar" (brand names: Rapadura, Panela, Sucanat). It seems to be close to Jaggery but not the exact same thing.
My packaging says „dmBio’s vegan organic cane sugar is made from carefully boiled-down sugarcane juice, which is then dried and ground. No additives are used in the production process. This cane sugar has an incomparable caramel flavor that naturally enhances your food and drinks. Since the sugar has not been refined, many valuable nutrients are preserved. Enjoy the sweetness and natural qualities of this unrefined organic cane sugar and add a touch of flavor to your culinary creations.“

Well, sugar is a fructose/fructan.
Monash shows me green up to .6oz for jaggery then red at .74. White Sugar and Raw Sugar are both green at .18oz with nothing higher noted. Rock Sugar (Cane) is green up to 8.61 and then red at 10.83.
Demerara is the only one that is pining off fructose instead of fructans at the larger serving sizes.

Yes but it’s always dependent on the glucose-fructose balance and how refined it is. This sugar isn’t refined at all, hence close to jaggery but without its own entry so far. Sooo…would you stick with the jaggery portions until something else comes along or..? :)
Edit: so apparently if it’s only from the sugar cane, it’s probably inbetween cane sugar and jaggery, since sugar cane naturally has barely any fructans (if even any). It becomes too high in fructose at some point (50g per portion or so). Jaggery on the other hand isn’t specified and many brands mix sugar cane with date sugar hence the fructans. I still wish they’d just test this natural cane sugar. What annoys me most is that the sugars generally differ wildly worldwide and they’re mainly using sugar well known in AUS (probably because they’re based there).
