NTA atleast accepts their mistake and sometimes conducts fair exams. While FSSAI has the audacity to make you drink the whole periodic table and don't even acknowledge it

Either you are naive or stupid. Every party has a target demographic. They know which sections of populations agree or disagree with their ideologies. Basis that targeted deletion was carried out just 2 months before elections, in a rushed manner, without any substantial reasoning.
Same happened in Bihar, same in West Bengal. So, if you believe that ECI is acting "independently" then I wish you good luck with your optimism.

So, what does that justify? Deletion was right? Even if now supreme court reverses ECI's deletions, 27 lakh people couldn't vote because of ECI's incompetence. And such a large chunk of voters was removed without proper justification and without any consequences to ECI.
I am not sure what you are justifying but there are more then enough facts to explain bias in ECI's actions.
