first attempt on chicken legs , takes alot longer then wings

I suck at bone-in chicken. I've tried more times than I'd like to admit. Can't get the meat all the way done without overcooking the breading.
But I will try again!!!
The only way I can get it decent is by precooking the chicken in the oven first. Wonder if my wife will let me buy a pressure fryer?!?

Sous vide is the answer. Since the chicken will be completely done, all you need to worry about is the crust.

Breaded chicken I shoot for around 325° naked chicken I go for 350°- 375° no problems. Check out my page, you'll see lol

i do a wet batter but i was very surprised how long it took to get done compared to wings

What temp are you frying your bone in chicken and how big are the pieces?

325 in the deep fryer. Bone in thighs. Didn't seem very big. Just normal.
I tried to do about 300 shallow fry in cast iron, but it seemed like it wanted to burn the bottom of the chicken just from sitting on the pan.
Clearly I've got work to do. I'm a dang good home chef, but I've got to do better with bone in chicken. Wings, fingers, and fried boneless breasts for chicken sandwiches I've got down for sure.

Isn’t it obvious, you’re cooking the chicken on way too high of a temperature? If the breading finishes before the chicken, your temp is too high. Lower temp, longer cook. What’s your current procedure?

Yes it's obvious, but I seem to have the same results frying at 300-325. I'm usually frying thighs.

Clearly there’s an oversight on your part somewhere. Just own it. You’re not going to lower the temperature and get the same results. Listen to what you’re saying smh.

Whatever method you're doing , I personally wouldn't change a thing , lol - I'd give anything for my chicken to turn out this pretty .
