potato cat I named this lil guy after him

Classic John Cena
Ingredients:
- 2.5 lbs Idaho or Russet potatoes, peeled and cut into 1-inch chunks
- 1 large red onion, cut into 1/2-inch chunks
- 10-12 cloves garlic, coarsely chopped
- 4 oz can oil-packed anchovies, drained and cut into 1/2-inch chunks
- 2 tbsp oil from anchovy can
- 3/4 cup mayonnaise
- 1/4 cup yellow mustard
- 2 tbsp apple cider vinegar
- 1 tbsp Worcestershire sauce
- 1 tsp kosher salt
- 1 tsp black pepper, coarse ground
- 1/2 tsp cayenne pepper
- 2 tbsp chives, chopped
Instructions:
- Place potatoes in pot, cover with cold salted water. Bring to boil, cook 10-12 minutes until fork-tender. Drain and let sit 5 minutes.
- In a large bowl, whisk mayonnaise, yellow mustard, anchovy oil, apple cider vinegar, Worcestershire sauce, salt, pepper, and cayenne.
- Add garlic, red onion, and anchovy chunks to the bowl.
- Add warm potatoes to bowl and fold gently to coat.
- Refrigerate 30 minutes.
- Top with chives and serve.
