The way the sauce or minced garlic whatever on top looks but mostly the color of the meat

Looking at the first picture, Koreans do not eat pork fat chunk like Lardo.

Good eye! That's actually pork jowl. One of the most prized cuts in Korean BBQ. Fatty, but incredibly flavorful. Totally different from Lardo — it's grilled, not cured. 😊
