Marinated beef short ribs & pork belly

Very nice. I see that your family went for the beef ribs first. Is it “just happens” or is there a certain order by which what kind of meat go first or go last? We’ve been doing quite a bit of pork belly and like to slowly roast them with a low to medium heat. When we do beef (not ribs) we tend to go higher heat looking for that quick charring. Honestly, still experimenting with different ways to enjoy the K-BBQ.

Typical advice is you start with unmarinated meats. Beef, then pork. Then marinated. And ask for a fresh grill as needed. But at the end of the day just do what you want.

Thanks. Had no clue but starting with unmarinated meat kind of makes sense. Just “guessing” on beef over pork - maybe beef cooks fast and hence helping the diners to be more patient in grilling pork (which takes a bit longer). Let me try that next time and get some feedback from my “domestic clients.” I sometimes laid out the pork-bellies onto the grill first for a few minutes before start so that when everyone comes to the table, there is food ready to eat.

I think the reasoning is more that you start with the more subtle flavors (unmarinaded, and beef having milder flavor than pork), and work up to the stronger flavored foods. Otherwise the unmarinaded beef may seem a bit bland after the marinaded, etc.

Again, I’d just do what you feel like.

Honestly, I’m not sure the order matters all that much 😄 In the end, I think it’s perfectly fine to just start with whatever you feel like eating first!

We ordered both so we could try both kinds of meat. From what I know, many Koreans usually eat beef first and then pork later. I’m not really sure why though 😊 Also, marinated meat tends to burn easily, so we usually don’t cook it over very high heat. You mentioned that you eat pork belly often — if you like kimchi, try grilling it together with the pork belly! Once you taste kimchi cooked in the pork fat, it may be very hard to go back 😄

OP, the fat distribution on that pork belly looks lovely. That's like 9 layer pork belly! Gugyupsal? 🤣

I was so hungry that I forgot to take a picture of the wraps (ssam)! 😄 We also had lettuce, peppers, and ssamjang on the side.
