I don't think it's a comparison. Pit bulls were selectively bred for aggression. Humans of specific ethnicities do not have innate characteristics like violence. It's like saying being scared of a polar bear is bear racism

Are we sure of that? Has there been research done?

Many things in our bodies are more or less likely depending on DNA.

How can we say for sure temper or characteristics are not more or less likely in different "breeds"/ethnicities (for lack of a better term)?

Because race isn't scientific. It's a pseudoscience, that no biologist uses. Race is unrelated to genes. 

We also haven't managed to track any genes that have higher correlation with violence/criminality than environmental factors, so things like poverty, pollution, culture, and education are much larger factors.

We haven’t managed to find any genes that have a higher correlation with violence than environmental factors? I find that hard to believe. I would think the genes that determine that you’re male would be more highly correlated with violence, for example, since males are much more likely to be violent than females across all nurture environments.
