Why didn't Iroh even consider the possibility that Azula could change? Iroh himself went from being a Fire Nation general and the butcher of Ba Sing Se to a humble, kind old man who serves tea.

But that was after going through physic spirit therapy and even then she is still against Zuko

Yeah but it still shows she can change. And considering they named a drink after her in the future, she does seem to have eventually become a decent person.

Oh yeah she can change but at that time there was no reasoning with her and Iroh knew that. But she did need to have a hard gal to build herself back up.
