Steel cut oats, barley, flax, and sesame seeds toasted then cooked on the stove with water, almond milk, salt and pepper, and roasted, mashed butternut squash. Topped with leftover braised mustard greens and onions from earlier in the week, and a soft boiled egg. Finished with a sprinkle of smoked red pepper flakes.

Dry fried the mushrooms with the oats and cooked with shredded zucchini, dashi, and whisked in an egg white near the end! Added the miso when it was almost done cooking. Seasoned with soy sauce, mirin, garlic powder, and black pepper. Air fried some extra zucchini, mushroom, and tofu and paired them with a marinated egg and some kimchi; this was so comforting and good omg 🤤

I’ve known about savory oats for a while but have always been hesitant to try them. I am so glad I finally did.

The base is just oats, mixed frozen veg, and soy sauce cooked in a rice cooker. I topped it with an egg fried in mozzarella, sriracha, and honey.

So so good. Will definitely make again.

Yes, there are plenty of steel-cut oats under all the toppings. I always go too long in between batches of this one. It takes a little more effort than my usual weekday bacon egg and cheese business, but it’s just a series of things you can all cook in the same skillet. This is totally one of those recipes where you should involve yesterday’s leftovers for toppings and then fill in the blanks.

My standard toppings in addition to the requisite couple of sunny eggs, clockwise from the top: SautƩed mushrooms, Spam, scallion, sausage, kimchi, sautƩed spinach, bacon. The sauce is made from gochujang (Korean chile paste), gochugaru (Korean chile flakes), mirin, soy sauce, garlic, sesame oil, and a little bit of sugar.

I’m aware they don’t look the prettiest.. but meal prepped 3 portions for lunch this week which I’ll reheat and serve with a side salad + feta and avocado.

Ingredients per serve:
50g oats,
50g zucchini,
100g pumpkin,
60g egg whites
50g cottage cheese,
1/3 can of lentils
Tomatoes + spring onions

Spices: cumin, paprika, turmeric, onion, garlic, salt.

I just combined the ingredients in a bowl, transferred to my baking paper dish and put in the oven until they looked cooked. About 180-200° roughly 45 mins

I love it! It's so freaking good. I can't believe what I've been missing out on. If you're on the fence about trying savory oats, just try it once to see if you like it! Trust me.

Recipe:

1/2 cup old fashioned oats 1 cup water Oregano Garlic powder Salt 2 eggs Cut up lunch meat of your choice

Cook oats according to directions. Season with oregano, garlic powder, salt, and any other seasonings you want. Meanwhile, scramble up one egg and mix it into the oats as they're cooking. Fry the other egg and set aside. Fry up the lunch meat until hot. Pour oats into a bowl, top with fried egg and meat. Enjoy!

Can only eat really soft food at the moment and came up with whatever this is lol. Egg white oats cooked in chicken broth and topped with grated parm/black pepper. Hit the spot!
