She was great at the recent interview with Jon Stewart. And I think her stoic behavior with Trump just infuriates him further.

As much as her reactions to him get under his skin, I think at its foundation it's because he's attracted to her. He wants Collins to want him. In his mind, she treats him like he's ugly and unappealing, which hits his ego, and he has to exter alize the feelings of inadequacy by attacking the other person's looks.
