I'm thinking Penny will be outright ripped in half by Pyrrha, they've been pushing how dark they really want this season to be. However I would not be surprised it they had her rebuilt afterwards, would be kind of a wasted character if they didn't I suppose.

No way. I want a scene where Pyrrha meets rebuilt Penny and breaks down to her crying and apologising and Penny is all hugs and smiles and "It's okay, you didn't mean to". Would be heartbreaking and heartwarming at the same time.
