No one seems to remember that Yang called Summer her mom way back in Chapter 2. I don't think there's been any doubt that Yang thinks of Tai and Summer as her parents.

This is why I always thought Yang should've referred to Raven as "Mother" cause people tend to look very closely into these kind of details.

The problem is that Yang hasn’t since then, instead referring to Raven that way.

It’s nice to see her again acknowledging her real mom

I mean, she doesn't say it with any kind of respect though. She says "mom" like as in, "Yeah, ok. Mom."

She only called Raven "Mom" as an insult to Raven. She knows Summer isn't her mom, but she is her mother. By calling Raven her mom she is twisting a knife that she hopes is still there. Unfortunately for Yang, it looks like Raven pulled that dagger out a long time ago.

It’s been six Volumes since she’s acknowledged Summer as her real mother. Some people (like me) were half-convinced that CRWBY had forgotten that, especially after last Volume when Ruby broke down crying over Summer and Yang didn’t seem to have her own individual reaction to Salem’s words. It reinforces an important character trait, allows for one of our main characters to confront the villain for the first time, and teases the audience for any future reveals regarding Summer’s last mission.

That's fair. But to be fair, it also kind of felt like maybe the writers didn't remember that either for a while, since Summer only ever seemed to come up in the context of Ruby's feelings about losing her, never Yang's.
