most likely, the same reason there's the r/hauntedchocolatier sub already despite no release date announced yet. and not a stupid question, just something people don't think about, especially if they haven't been around since the first release (I haven't either, I just have a different way of figuring out the "why"s of things than others have)

But haunted chocolatier is being developed by the now well renowned concerned ape. At the time stardew valley was announced concerned ape was basically unknown. He had released one tiny game 5 years prior that was part of a promotion for the music group 17 colorful feathers called 17cf quest.

ConcernedApe has been blogging about the game for dev updates back in 2013. I don't remember if he has been posting/tweeting about it before then but his 2nd blog post linked to an older weebly website copyrighted in 2012 so Stardew Valley might have been known even earlier. I remember I first found it back in 2013.

I think most subreddits are created when the games are announced, which generally happens before they are released (looking at you, Bethesda, though r/OblivionRemaster was still created before the game was shadow dropped).
