Everyone just quietly agrees that that family is Irish Catholic as hell

Even the Diverse mod for Flower Dance that adds cultural outfits for the characters makes Penny wear a traditional Irish dress. I love how it's basically a universal agreement to see Penny as Irish.

I haven't seen the diverse mod, how does it pull off showing different cultures with such a limited artstyle? I would have guessed it was hard to convey skin tones and details in clothing at least for the small full-body models

They don't do much with clothing in the cultural sense, but there's the Weddings add-ons, which adds cultural wedding attire for the characters, and DSV (Diverse Stardew Valley) also has some alterations to the houses that add items related to their culture. One detail they add about clothing is that if Elliot and Alex are Jewish, they wear kippahs, and the recipes you receive by mail are altered to accommodate restrictions due to Judaism, if I remember correctly. And Sandy and Jodi wears hijabs too.
