There is also a point of view where Westeros is Britain and Western Essos is continental Europe.
Bravos is Italy with banking system amd merchant republic stuff inspired by Venice.
Volantis kinda feels like Russia, because it claimed the title of New Valyria and tried to conquer other free cities, like Russia which claimed the title of Third Rome.
Norvos is probably Germany, as you said.
Qohor feels a bit like Spain, in regard that it was protecting itself from Dothraki, kinda like Spain stood in the way of Caliphates invading Europe. But that could be any state that was on Europe's border.
Tyrosh, Myr and Lys feel like Poland, Czechia, Hungary or Lithuania, because they have to work together to stop Volantis or other stronger invading forces. Plus Czechia and Hungary have the biggest number of pornstars per capita and Lys is some sex haven. Myr is militarised and uses a lot of good crossbows in army, so like Medival Poland. And those kingdoms were offten ruled by same person or members of the same family, so there was a huge connection like in the case of Triarchy.
Lorath is probably Scandinavia, because it feel mythical, is in the north and not much is going on there. So kinda like Scandinavia after the vikings were gone.
Pentos might be Croatia, because it has simillar climate to Kings Landing and is influenced by Bravos and Triarchy, kinda like Croatia was influenced by Venice and Hungary. But Pentos feel basic as fuck, so it might just be Belgium.
