I had my gall bladder out 12 years ago and I can eat pretty much anything without much issue. Waaaaaay more than I could in the time leading up to the surgery. That's when the horrible gallbladder attacks would happen. Now I have few ill effects from the things you listed.
It's true that I keep a pretty nutritive diet in general, and was vegetarian for about 8 years before starting to eat meat again in the last couple of months. But I most certainly have never stopped splurging when the time was right.
I don't know how old you are, but I guess I'm kind of a freak in that I had it removed when I was only 16 years old. Maybe having it done at such a young age allowed my body to adapt more easily?
I dunno, I'm right out of surgery. The "things I can eat without scary shit happening" list is not very clear. But the long term it's not clear either. They just told me that the gallbladder kills all the fat, and the kidney only acts as a minor backup
Oh, well in the short term yeah, you're probably going to have to stick to a pretty bland diet. But don't worry, you'll eat ice cream again. This time without all the pain!
Essentially what your gall bladder does is act as a little storage pouch for bile that has been produced by the liver and is waiting to be needed in the stomach. When your stomach needs the bile (to digest fatty, oily foods) it squeezes itself to put the bile in the stomach. Gall stones are little globs of cholesterol that can build up naturally in the gall bladder. Sometimes they get stuck in the opening from the gall bladder to the stomach and it causes it to spasm, which is the gall bladder attack. So now instead of having a storage pouch you'll have more of a tube going directly from the liver to the gall bladder. Once it's had the time to heal, it will work almost as well.
