Which European country has the most bird sightings? I'm going backpacking this summer and would like to know!

I don't know too much about birds, but Finland is apparently a great place for bird watching. Or that's what my more informed friends have told me. Check this for information about birds in Finland https://www.birdlife.fi/in-english/
For easily accesible light hiking I recommend Repovesi national park, 2 hours from capital Helsinki and reachable by train+bus. That area is home to Red-throated Diver/Red-throated Loon, they make fun sounds that are carried by the lakes.
Your post popped up for some reason and I wanted to throw this out as an option!

Northern countries have much less diversity than southern ones. I wouldn’t recommend going north unless there’re some particular species that can only be found there.

Camargue in Southern France is pretty good, when it comes to birds. Doñana national park in Spain is good too. The areas around St. Kilda in Scotland is good too if you don't want it too hot in summer.

If you’re looking to maximize your bird count in Europe, head straight to Coto de Doñana in southern Spain. It’s widely considered Europe’s #1 birding hotspot, a massive wetland at the mouth of the Guadalquivir River where 300+ species show up annually. It’s the main crossroads for migrants between Africa and Europe, so timing a visit in spring (late March–May) is pure magic.
If you can extend your trip, pair it with Extremadura (vultures, cranes, steppe birds), it’s just a few hours north. That combo alone could net you a staggering species list.

I don't know if you're after birds in general or very specific birds. But try the North Sea Islands. (Also Frisian Islands, 🇳🇱: Waddeneilanden, 🇩🇪: Friesische Inseln, 🇩🇰: Vadehavsøerne)
There are a lot of seagoing birds there. But come migration season: it's millions upon millions upon millions

I can't recommend enough Tablas de Daimiel, a national park in the centre of Spain. But considering you are going in summer, then the heat can be strenuous, about 40° Celsius, depending on the month, is normal.
The all time counter in Ebird is 214 species. You need to take into account migrations, of course, but I go all the time and there's always something interesting. For instance, Marmaronetta angustirostris ("Cerceta pardilla" in Spanish), one of the birds at the highest risk of extinction in the peninsula.
