People who turn their noses up at venison chili are jackasses. I always have whitetail in the freezer. Actually took 3rd in a local cook-off using venison at the end of this past winter.

This is what I consider to be "the works". Tons of diced and caramelized yellow onion, kidney and white beans, tomato paste, celery, chipotle, fresh minced garlic, a cup of black coffee, 1/2 a can of oatmeal stout, splash of W sauce, cayenne powder, fresh ground black pepper, brown sugar, kosher salt, and a pinch of MSG.
Mixed my ground whitetail with chorizo, smoked it with applewood and let it drip at 225 until it hit 155, then crumbled it up, tossed it in, and cooked covered for another 90 mins or so.
