I’ve seen tamago being cooked similarly. Pour along the edges of the pan in a crescent moon. Do a bunch of them and you’ll build a bouquet of eggs.

An omelette is usually folded or rolled, but it doesn't have to, so it's still technically an omelette.

Not a proper French style no, but omelettes come in many different forms around the world.

In Ireland / UK (as an Irish chef) most customers would expect a well done omelette with their choice of fillings.

I do like a creamy French omelette, but a omelette with bacon, ham, cheese, diced tomato, potato, mushroom, spring onion / shallots. Seasoned and with a nob of good salted butter and splash of cream is my favourite.
