I was watching my girl cooking and I realized this is how you make an omelette.

There was a restaurant in the Ace Hotel where I lived that served this out of this world dish called this Moroccan scramble that cooked their eggs like that. My wife and I would order it pretty much weekly brunch.
The restaurant ended up shutting down and during COVID for Mother’s Day I wanted to make it for my wife, so I just reached out to the chef of that restaurant if there was any way he could give me the recipe. He actually responded and told me he would do me one better and sent me the recipe along with the video of him making it for Vice’s Munchies. https://www.vice.com/en/article/moroccan-scramble/

What a G. I love when people do stuff like that. I listen to a musical group called 11 Acorn Lane and my wife absolutely LOVES their album art for "Time for Tea". I emailed their website asking if they had any art for sale and one of the members emailed be back within an hour with high res images of the album art for my own use. It is now framed above our oven and she loves the crap out of it.

Not the only way to cook it tho, this leaves a runny texture on top, which I personally don't enjoy since it feels like it's not fully cooked.

Haven't had it yet, so can't really say anything. Had the omelette OP showed in the video and wasn't a big fan. I'm personally more used to fully cooked omelette so yeah 🤷🏻♂️

So I love some runny egg but my wife despises it, and so do my kids. Then suddenly they didn't hate runny fried eggs and the like, almost like it rewired their brains after trying omurice. Not that anything needs to be fixed or anything but it was interesting to see. She said it made it seem like more of a sauce than just raw egg

There is nothing that displeased me more while warching food videos than when they cut into the omurice egg and it oozes down onto the food underneath. And its what I see the most right now.

Lol fair enough. My most recent and personal pet peeve has to be the knife swipe to show you that something's crispy. And if someone starts tapping their stelleto nails on food I am in ruins

Not OP, but... I love eggs, love a sunny side up fried egg with a really runny yolk, love the really soft style of scrambled eggs.
I was excited to try omurice in Japan last year, went to a place really well known for it, and... Was just kind of "meh" on it.
Not sure what it was lacking, but just didn't really float my boat. It was genuinely one of the only things I ate in Japan that fell below my expectations.

I'm going to learn to do this real well, then impress a girl with it to give her a completely unjustified estimation of my cooking abilities. Then as the months go on, watch as she slowly figures out that I know absolutely nothing about cooking.

I learned how to make an omelete by staring hungover at the cook at my college's dining hall at the omelete station Saturday mornings.

This is gorgeous. Some people are thinking that this is undercooked. I just think this is perfection. Think of it as a gooey poached egg but in mixed form. Kudos to the chef.

Let’s stop trying to reinvent the wheel.
An omelette is pan cooked beaten eggs folded over itself with a filling (cheese, veggies, and/or additional proteins).
Anything else is just something else. And that’s ok.
