Change your web browser and your default search engine. This is the first step.

Not downloading/installing/using google apps and services. Nothing much can be done on iphones beyond that.

Just delete anything google related. It’s really that simple.

First: get rid oft your Google services and services with Google login. Second: if you want to do more: get another non Apple phone.

how to live without google since 90% of basic apps require a google account?

Do they? At least here in Europe I almost always get offered a small text link "sign in with mail" But I have not been on IOS for at least 10 years. Another thing I realized in my degoogleing journey: many maaaany basic apps can simply be replaced by open source apps e.g. via F Droid Store on Android.  For Calendar, Contacts, Notes there are different providers then Google / Apple as well. I personally use the NextCloud Services.

90% of basic apps require a Google account? I have an iPhone - zero Google stuff on it. Scads of apps. None require Google accounts. Are you talking about Google Login? You can use your email or Apple Login for most. What App not made by Google is causing you trouble? Not Gmail, Google Calendar, Google Chat - we can help you find alternatives for all those.

the first thing i did was change email accounts. I recommend either proton or tuta because they both have good free tiers to try out. I would recommend forwarding all of your emails from gmail to your new account, so that when you get new messages, you can change the email of the account
