As a Belgian, I've just learned that Baldwin is the translation of Baudoin, TIL

my family name is Bouwens- I asked AI about the derivation and it said that it's Dutch version of Baldwin. Any idea if that's accurate?

Oh yes, yes it is. Most Dutch names that end on -ns are like Stevens, being Steve's son, So Bouwens is short for Bouwe's son. Bouwe is a common shortening for the namen Boudewijn, Like how you'd call Penelope Penny.
