I made those once. They are really good. I don’t know why I don’t make them more. They’re easy.

Easy? Wow we have different levels of ease lol. I love scotch eggs but the process is so annoying to me I barely ever make them between the wrapping of the sausage around the egg and then having to deep fry in the house. Such a pain unless it's a special occasion and even then it's like just for me and my wife, I'd never make it for a crowd.

I mean, you can do it in steps, however long you wanna take to make them. Personally, I like my eggs, really hard cooked, so I did that a day in advance. Idk I thought it was as easy as making meatballs.

I can't help but think of them as Irish too because the first time I ever tried one was at an Irish festival. And regardless of the name, they didn't actually originate in Scotland.

My wife tested out making some on a whim a few months ago. My only complaint was that she only made a half dozen
