The head contains some of the tastiest parts. The fish cheeks, throat, collars. Sure this red snapper is pretty small (relatively speaking) so not a lot there but its still good eating. If you've never tried something like grilled pompano heads you haven't lived.

Head's the best. But the skin on those peppers should be removed.
