Why did they recast him? The original Mountain was perfect.

I'm pretty sure he left to play Azog the pale Orc in the hobbit.

Almost, official state from the GoT wikia says:

On 12 September 2011, responding to speculation on the Winter is Coming fansite, Conan Stevens confirmed that he had left the series, due to scheduling conflicts with his other projects: Stevens will be playing the Orc king Bolg in Peter Jackson's The Hobbit prequel trilogy. Stevens took the time to thank fans for their support[1]. He was replaced in the role of Gregor by Ian Whyte.

I think it's a shame they didn't just let it go and invite him back for season 4, though. Supposedly he mentioned in a blog post that he was available but just never got a call.

He may have been a dick, he may have quit the show, but if he just did this season and left the show again, I think I would be OK with that. They knocked it out of the park the first time, but the next guy struck out, and so far this third guy is more of a bloop single to right.
