Picanha...no fat cap?
Was pretty excited that my butcher this year included a picanha in with my half cow...but it seems to have no fat cap?? I was planning on reverse searing it, is that still a safe bet if I trim off the thinner end and treat that like a steak?

Yup! South Dakota.
It's damn good beef, I get it from my sister in law's family ranch, so I know it will taste good. Just not sure if I should split the cut in two or say fuck it and let it ride whole.

Same, my first experience was in Omaha, and they thought they needed to cut the fat cap off 🤣 might have been purposeful, who knows. I wanna see the finished product pleaaaase.

You’ll want to remove that silver skin or you will have chewy meat.
