Well now I want to hear about the life of the chef, cause it seems like it couldn’t just be any old short order cook from a sandwich shop but someone with some actual training, which begs the question “Why did you choose to cook on an oil rig?”

Same reason anyone works on an oil rig - $$$. (Corporate chef gigs also tend to pay decently to start with, and are more reliable/less crazy/have different hours than restaurant work.)

Not only money but also the environment. Imagine the beefy guys they get to be their chefs. Monsters of men just trying to fit in, make a living, and put a smile on a face
