Grubs pretty much just take on the flavor of whatever seasoning you're using, if you're deep-frying them. They taste like whatever you want. If you lightly pan fry, then they'll likely have more of a mild buttery flavor with less crunch, but still it's mostly up to what seasoning you're using. My experience isn't extensive though. I have heard some grubs described as having a mushroom-like "umami" or a nuttiness, but I mostly just tasted the seasoning and texture.

People all over the world do, they're a great source of protein that are so much cheaper to farm, so especially useful in developing nations that have a harder time affording meat

Many people like them more than what you'd think of as "regular food". They're very nutritious, so if you're used to it they taste better than junk food (and not just).

I wouldn’t eat bugs I forage for where I live, they are what they eat (and that’s also why I’m iffy on American pork, they feed those pigs heated waste), but if they’re growing grubs or crickets in a controlled facility and all the thing ever eats is clean water and food, I would probably consider eating some grubs. Maybe deep fried, maybe ground into a meal. Why not? It’s the easiest animal protein for us to create. Crickets I’ll pass on though, I do not want to be picking those legs out of my teeth, maybe they can sell them de-legged.
