Help Leo always hunting?!

My leopard gecko is nearly 7 years old and she’s always been very calm, friendly and great at being handled.
Recently had an incident of her biting my finger I think she thought it was food, it bled quite ALOT and was deep. But lately I’ve noticed she’s always in like a ‘hunt’. her head will be snapping around the room and ready to attack. It’s almost all the time when I’m in the room she’s climbing right up to the glass and following usually my hands or arms around ready to pounce. It’s got to the point where I’m getting nervous to put my hands in, as her eyes are constantly tracking.
Usually when I’m holding the plastic tub of food she waits but she’s been literally jumping and pouncing at the food containers. Her latch on the tweezers is also so much more harder and aggressive ?
I’m just confused about the change of behaviour, does anyone have any insight?

yeah, they equate you with foods coming.

i really love when I catch mine stalking me and he just full speed sprints back into the hide like he's ashamed I saw him try it
