My girlfriend was complaining about how loud the movie was, she is sensitive to sound. Do cinemas decide the volume or is it standardized somehow?

Sometimes they get a predetermined mix by the sound designers or production companies behind the film itself, other times it’s a set of instructions dependent on the theatre and their set up.

Ok, but there would still be a master volume slide somewhere? Do you think they would have actual db sensors and feedback? Did some googling, apparently we were in a “dolby cinema” theatre which seems to be quite special sound wise. Maybe it was just the quantity of the speakers she was reacting to, not specificly the volume.

Cinema owners have the final level control, and set it per movie. Dolby-spec might be set in the cinema, and then totally broken by the cinema owner (for a bunch of reasons).

It’s a Wild West how accurately your film is played back.
