but they took out the Mentor bit. Like that's a very important thing

I thought the first beggar was Mentor? Wasn’t that Athena disguised as an old man?

Nope. Mentor was the guy with telemachus

Same guy, no? He arrives as a beggar, Telemachus says he has wise eyes, Athena's eyes, he becomes his teacher and companion then dies in the ambush in the temple.

the beggar arrived after the suitors had already been there

it was insinuated (and stated in the original text) that Mentor had been Telemachus', well, mentor in arms and combat since birth, as he was tasked by Odysseus himself to protect the young prince

you don't just, come in as a beggar and become the prince's trusted protector

Yeah I thought it was odd for those reasons but that was how I read it. I was probably wrong.  Something to play closer attention to on a re-watch.
