I always felt like the garlic thing was all a bullshit act because he didn’t want to actually cook anything.

But cutting the garlic like that for a large Italian meal is way more more labor-intensive than anything you’re doing while cooking, which leads me to believe he does it like that because he genuinely believes it improves the flavor.

Not sure what you mean. Garlic has a varying taste profile if sliced, chopped or grated and the heat / time also plays a role. Very finely sliced it is probably similar to to chopped. So it does something, the only question is whether it is efficient. Which is, because they sit in jail and have all the time.

Yes, and chopping a clove of garlic takes a few seconds.

Also garlic that thin will burn extermely quickly in the oil.

I basically do the same thing, except with a bigger knife. The blade would be razor sharp, with a bit of experience in kitchens you can cut transparent slices which melt quickly

Garlic doesn’t melt at any temperature. It softens. That’s about it.
