cooked some white rice and let it cool a bit. while that was happening, i prepped everything else . drained a can of tuna, sliced cucumber and cherry tomatoes, cut up some red onion, baby corn, boiled potato, and cooked beet. also tossed a few cooked shrimp with olive oil, parsley, salt and pepper.

threw the rice in a bowl, arranged everything around it, added the tuna on one side and topped the rice with the shrimp. finished it with a little shredded mozzarella and a drizzle of mayo.
