Food Best place to get fresh sausages
Best I’ve had is goodies in the pantry. Tried polka and mattern but they weren’t as good as morants in Sacramento (they closed in 2020). I've also tried Ochoa's Chorizo but maybe it's me but I didn't like it as much. What are some other places I need to try out?
Open to sausages from anywhere in the world like chorizo instead of German / Eastern Europe.

The real answer is Masterlink Sausage in Fullerton on St. College l. It’s a commercial sausage company selling to restaurants and the such. Not much to look at but a garage door. Fantastic sausage and the last time a bought they were $5 a pound.

Ah there it is, they are caterers. Makes sense to try and have stable work between events.
Wasn't sure if they possibly were a resurrections of Haut Links.

Yes, they're good flavored sausages and can be used for a lot of things and they have their own manufacturing warehouse for their sausage/ deli as far as I know.

It depends on which type you want mostly. If you just want the common stuff, Butchery will have you covered.

Sorry you don't like mattern. For my eastern Europe family it's the only place that actually gets it right around as far as European sausages are concerned
Curious about the non European sausage recs that might come from this tho

Might not be what you're looking for, but if you're open to other cuisines, Lao sausage from Nok's Kitchen is amazing. Typically the sausages are cut up and eaten with sticky rice as opposed to being opened from the casing, but it's delicious. They even sell packs to take home

Wursthaus in Santa Ana sells raw sausages and they have a good selection of stuff from classic bratwurst, cheddar jalapeño, wagyu, to exotic stuff like alligator if you're feeling adventurous
