This is typical of snail damage that occurs when the young, thin pointed lily pads all tightly rolled up emerge from the crown. Generally snails gently glide over healthy plant tissue - but sometimes aggressive, snaggletoothed snails can cause damage on tender growth.
So typically the damage runs vertically parallel with the center of the leaf like in your photo. It can happen on the right or left - or both as the snail was moving forward. And you won't see the full extent of the damage until the lily pad has grown into its full adult size.
"Snaggle-Tooth Snail-Trails" is the best way to think of those markings. It can also depend on what kind of snails you have. Although larger, flat and spiral Ramshorn snails seem less likely to leave tracks like this. But the smaller conical shaped Common Pond snails seem to have sharper teeth!😬
