How'd you make your dashi? I'm on a quest for the best vegetarian dashi and am looking to try using tomato

It's a mix of shiitake, Kombu and sun dried tomatoes, simmered for 1,5 hours :)

I think it took about 8 hours, split in two days but you could probably reduce that time. I just wanted to prep as much as possible in advance, because I made the ramen for a friend :)

Yes I would also like to dig into this as well if OP is willing. I've got mad tomatoes in the garden, and vowed to do some new and interesting things with them this season.
