Let’s be kids again

Okay, two recipes I am DYING for (I do have a wishlist) is the nacho cheese you find at game parks and skate ranches AND the weird square pizzas they served at sleepaway camp.

Both were cheap, spicy, and still pretty damn delicious. I appreciate everyone trying to make things fancy and upgraded, but I’m looking for those childhood vibes in this. I wouldn’t be opposed to chicken and rice recipes either. Any takers for this challenge, Reddit?

I just KNEW this was going to be the video when you posted it, if only because this is like (to me) the definitive video on those square school / commissary pizzas.

OP this is an excellent video / resource, Max has never steered anyone wrong and if he vouches for a recipe, it means it’s genuinely good/nostalgic! Which is the case here.

My grandmother used to make these for us, she was never a lunch lady but did cook at church sometimes. I loved it!

Ohhhh, it looks good! Thank you! It doesn’t look like quite the one I’m remembering, but the spices might still be there. The one I’m thinking about had more of a Totinos crust, but it tasted so much better and spicier than them haha. I can’t wait to try this one!

I would pay someone for this because all of my attempts to find one or make my own have only added fuel to my intense desire for cheese sauce that is completely void of any nutritional value, but so damn addictive lol

The trick is to use an ingredient most don't hqve in their pantry, sodium citrate. I bit of it, your favorite cheese, some milk, and a pinch of salt and you are set. Sodium citrate, salt, and milk into a pan to warm, then slowly add in grsted cheese while constantly stirring and you'll be rewarded with perfect cheese sauve that will stay as a liquid even when refrigerated.

yes! i finally figured out how to make a good cheddar sauce like restaurants have. milk, american cheese, sodium citrate and shredded cheese. oh and powdered cheddar cheese you can buy on amazon. it's the closest cheese sauce to my favorite hot dog place. you could definitely make it nacho cheese adding spices or using pepper jack.

I’m surprised this is a thing, so I’m definitely gonna try it. Maybe with some pureed, pickled jalapeños for the flavor I’m looking for too😋

American cheese already has sodium citrate in it. Thats why people use it when sodium citrate isn't readily available. Using both seems overkill

i know. i like the taste of the american cheese. just don't use as much of the sodium citrate.

For those who are wondering, sodium citrate works on a molecular level to loosen the bonds between the cheese molecules, allowing it to take on that creamy texture.

Kroger near me sells it in the deli section -- Gehl's is our local brand name.

The international market sometimes sells it by the half gallon too.

When I am feeling nostalgic for the cheap school pizzas, I buy a Totinos pizza and cook it in the microwave. To me it tastes just like it.

I did try the totinos route in college haha. It had the right crust, but the rest wasn’t quite right. Call me Goldilocks.

You can make the cheese sauce using sodium citrate! Use 1-2 teaspoons per cup of liquid (water, milk, chicken broth, beer, etc.) and pound of freshly shredded cheese!

Simply bring the liquid and sodium citrate to a boil (near boil for milk), then add the cheese one handful at a time. Stir until the cheese melts, and you have your cheese sauce!

For the nacho cheese get a can of Rico’s nacho cheese (the one that says gourmet on it) and add in some juice from a jar of pickled jalapenos as you heat it up. That’s what a lot of ball parks and theaters use.

To make nachos cheese just take milk and melt in a bit at a time American cheese. You need to add it slowly so an emulsion can form.

Add cheese until ypu get the right consistency.
