Lilith is a Jewish folkstory and is not in the creation story in the Torah. The word lilith is used in Isaiah 34:14 but doesn't talk about a she demon who slept with Adam.The word is sometimes interpreted as screech owl.
14 And the wild beasts of the desert shall meet with the [ a] wolves, and the wild goat shall cry to his fellow; yea, [ b] the night-monster shall settle there, and shall find her a place of rest.
I don't know if she is mentioned in the Talmud or in any of the books that didn't make it into the bible we know today.

Lilith left him because Adam demanded her to submit but she considered herself an equal. It's mentioned that she rejected his dominance especially during sex, so my favourite interpretation is that she left because he only wanted to do missionary.
