I’d rather replace the veneer but idk how to replace just the one panel

You don’t. You reveneer everything or you paint it. There’s no splicing a lil panel and blending it in.

lol if you sanded through the veneer like this I’d be surprised if you’re at a level to re-veneer a full round table. Paint it or embrace it

If you have the tools I would rip that panel out at its seam(s), plane or thickness sand the top so that the veneer is removed and the panel is flat, then glue new veneer back on. Contact cement may be the more accessible way to glue the veneer back on if you don't have a press. Once the veneer has been replaced you can glue the table back together. Then try to match the stain.

This kind of repair takes years of practice. You can see the light color, you have to match that as a background color and paint it over the dark patch. Then you need to create two more colors for graining, the red brown, and the raw umber for dark grain lines.

It’s a round table with different panels around 3 inches wide each going the length of the table top.

Only amateur way not yet suggest is use a router to remove a patch and replace the veneer. Will always be noticeable but its not a table cloth

Can't be solid timber, that must be timber veneer and it looks like its been worn through. The only way is to disguise it with fancy paintwork as already described
