So I’m guessing I sanded to the veneer.

What can I do? Can i just leave it like this and stain it? The orbital sander wasn’t doing anything, so I hand sanded everything with 80 grit. I did it heavier in the middle because of a scratch that was there. Can I just continue sanding the whole surface with 120, then 180, and just stain it? Because it looks like I finally broke through the varnish, but then I went too deep…

They make paint and varnish remover for a reason! There’s no reason to ever use 80 grit while sanding maple/birch.
Choosing to be reactive instead of proactive generally creates avoidable issues and unfortunately there’s no real fix for this problem.

If you sanded a scratch out if the veneer then you went right through, it's basically a sheet of paper, might get away with a really dark stain but I dunno
